Club’s annual Mother’s Day Buffet on Sunday, May 13.
Children
of all ages are welcome to attend and be entertained by a
balloon artist. Moms can sit back and relax to the soothing
sounds of chamber music, provided by a Classical String
Quartet.
The
first seating will take place at 11:30 a.m., with the second
seating at 2:45 p.m.
The
cost of this extravagant buffet is only $36.50 for adults and
$13.95 for children under 10 years of age.
Reserve
your table now for the seating you prefer by calling Shelly
Cantrelle from 9:00 a.m. until 4:00 p.m. or Marc Garcia after
4:00 p.m. at
529-1701.
If
you must cancel, please do so by noon on Thursday, May 10 to
avoid billing to your account. Remember to ask for your
cancellation number.
As
always, complimentary validated parking is available in the
WTC garage.

The
WTC’s Young Member Network hosted a fundraiser for India’s
Earthquake Relief effort on April 5 at the India Palace
Restaurant. Participants enjoyed listening to a performance of
classical Indian music and sampling Indian cuisine from a
sumptuous buffet prepared by the India Palace. Mr. Jay Shah, a
civil engineer who was an eye-witness to the tragedy and
involved in assessing damages to buildings in the State of
Gujarat, made a brief presentation on his experiences. The
event raised $2,400 for the Red Cross’s International
Response Fund for India. For those members who were unable to
attend the sold out event but would like to make a donation,
please contact Vanessa Bailey in the WTC Membership Department
at 529-1601 ext. 234. Donations will be accepted through May
31.

Select
a mixture of soft leaf lettuces, such as Boston, curly leaf or
lambs ear, crisp lettuces such as Iceberg, Romaine or Boc Choy
& stronger flavored leaves as Sorrel, Arugula or Curly
Endive or Red Cabbage.
Wash
the green & red leaves carefully in cold water and then
dry them in a salad spinner until the water has been shaken
from the leaves.
Wrap
the greens in a dry paper towel and keep them in the
refrigerator until
you
are ready to serve them. They may be broken into pieces before
chilling or just before the salad is assembled.
ANTEBELLUM
SALAD:
Mixed
Greens – Romaine, Green Leaf, Iceburg, Radicchio and Spring
Mix Lettuce
SALAD
DRESSING :
- 4 Egg Yolks or 1 cup of French Mustard (Dijonnaise)
- 1 Quart of Salad Oil
- Half Cup of Champagne Vinegar
- 1 Cup of Raspberry Coulis
Prepare
an emulsion with egg yolks or put 1 cup of French Mustard in
bowl.
Add
oil slowly in blending bowl. Pour in one-half cup champagne
vinegar and 1 cup of raspberry coulis.
