To the
misinformed author of the popular once popular song,
"Lemon Tree" (the fruit of the poor lemon is
impossible to eat"), We must disagree, saying it is one
of the most versatile of all fruits. Lemon juice is used to
flavor bread, muffins, frostings, custards, pies, puddings,
sherbets, gelatins, candy and soufflŽs.
It is a natural bleaching agent, and when applied to such
fruits and vegetables as apples, potatoes and avocados. Lemon
will retard discoloration. A few drops of lemon on a green
salad is quite refreshing, and on vegetables such as broccoli,
asparagus, and spinach, it can provide a low-calorie flavor
substitute for butter or oil. While it is an eye appealing
garnish for fish or certain drinks, (" We find the fruit
of the poor lemon tree impossible not to eat.")
Melt the butter in a small sauce pan, add the flour and
cook for a couple of minutes. Add the hot water whisking as
you pour. Bring to a boil then remove from the heat and cool
to room temperature. Beat the egg yolks until thick and
fluffy. Add the cooled mixture to this slowly in a pencil thin
line as you go. Add the Salt, Lemon rind and the lemon juice,
then set this mixture aside. Clean your mixing bowl thoroughly
before you beat the egg whites.
Add a pinch of Cream of Tartar to your egg whites and beat
until they hold a stiff peak, Add the superfine sugar to the
stiffened white slowly. Fold the whites into the lemon
mixture.
Put this mixture into a buttered and sugared medium
soufflŽ dish. Place in a moderate to hot oven 375* for 30 to
35 minutes. Serve immediately
You can also make them individual if you have the small
SoufflŽ dishes.
LEMON SOUFFLE
- Butter 2 Tbsp
- Flour 2 Tbsp
- Hot Water cup
- Salt Tsp
- Lemon Juice cup
- Egg Whites 6
- Sugar 1 cup
- Grated lemon Rind Tsp
- Cream of Tartar Pinch

The
WTC is receiving lots of positive feedback as more and more
members discover wonderful dining experiences and amenities at
over 100 reciprocal clubs in North America. Stand by to receive
the latest edition of the Reciprocal Clubs Directory, which will
be mailed to you soon!
As
you make your travel plans, be sure to remember these tips for
utilizing the reciprocal club program:
•
Contact Marketing Assistant Vanessa Bailey at 529-1601 ext. 234
in advance so she can send a letter of introduction on your
behalf to the clubs of your choice. Please note that all private
clubs require such notification, while World Trade Centers do
not. Entrance to a club can be denied without the appropriate
introduction. Also, please take your membership card for proof
of identification and account reference number.
•
Contact the reciprocal club directly for dining reservations,
guest room accommodations (if applicable), and any other
pertinent information such as parking availability, preferred
method of payment and guest usage fees. Many clubs will bill
directly to your WTC New Orleans account, though there is a $500
credit limit for all transactions. If charges are anticipated to
exceed the $500 credit limit, special arrangements can be made
with the reciprocal club for direct billing.
•
View the entire list of reciprocal clubs on the "Members
Only" section of the website (www.wtcno.org) in a
searchable format. You can access that area with your password
and id, which consists of your name (lower case and no spaces)
plus your member number. You can also view the entire list of
WTCs worldwide at www.wtca.org.
•
Restrictions: Please note the reciprocal club program has been
designed as a traveling benefit. The policy does exclude a WTC
New Orleans member from using a dining facility in another city
if that member lives within 50 miles of the facility.
Please
contact the Membership Department if you have any questions
about the services, facilities or resources mentioned above at
529-1601 ext. 226 or 234.
